Flaounopitta - Halloumi Pound Cake

All the flavour of flaounes, without the fuss!

Equipment

  • 1 round tin with whole
  • whisk

Ingredients
  

  • 6 eggs
  • 1 cup plain yogurt
  • ¾ cup sunflower oil
  • 1 cup milk
  • 3 cups flour (start with 3 and add more if needed for a thick batter)
  • 3 tbsp baking powder
  • ½ tsp ground mahlepi
  • ½ tsp ground mastic
  • ½ tsp ground nutmeg
  • 2 tbps Fresh or dried mint to taste
  • 1 cup raisins
  • 2 cups grated halloumi
  • 1 cup crumbled feta
  • 1 cup mixed cheeses (edam, anari, etc.)

Instructions
 

  • Preheat your oven to 170°C (fan) or 180°C (conventional).
  • In a large bowl, beat the eggs.
  • Add yogurt, oil, and milk. Mix well.
  • In a separate bowl, combine flour, baking powder, mahlepi, mastic, nutmeg.
  • Slowly fold the dry ingredients into the wet mix.
  • Add mint, raisins, and all the cheeses. Stir until combined.
  • Pour into a greased and floured round baking tin (about 26cm).
  • Bake for 40–50 minutes or until golden and a knife comes out clean.
  • Let it cool slightly before slicing. Enjoy warm or at room temp!

Notes

  • Raisins Tip: Toss the raisins in a bit of flour before adding them to the mixture — this helps them distribute evenly and not sink to the bottom.
  • Cheese Mix: We use a combo of edam, cheddar, and anari, but feel free to mix in any cheeses you like — just avoid very greasy ones.
  • Sesame: Optional, but adds a nice golden finish if sprinkled on top before baking.
  • Stores well in the fridge and reheats beautifully in a toaster or oven.
