Petit Four Biscuits

Petit fours are buttery biscuits filled with jam, inspired by 19th-century French traditions.

Equipment

  • Gloves
  • Piping bag with a large star tip
  • Baking trays
  • Parchment paper
  • Mixer (optional)

Ingredients
  

  • 250 gr Butter at room temperature
  • 250 gr all-purpose flour
  • 75 gr icing sugar
  • 50 gr cornflour
  • 1 tsp vanilla extract
  • ¼ tsp cardamon optional

For Assemly:

  • 150 gr dark chocolate melted
  • 150 gr mandarin or orange jam or any you like
  • Sprinkle

Instructions
 

  • Preheat the oven to 190ºC (fan setting).
  • In a bowl, combine the butter, flour, icing sugar, cornflour, vanilla, and cardamom.
  • Mix by hand until you have a soft dough (wear gloves if needed).
  • Transfer the dough to a piping bag with a large star tip.
  • Pipe 24 biscuits, each 5-6 cm in size, onto a baking tray lined with parchment paper.
  • Bake for 12-15 minutes, then let the biscuits cool completely.
  • Fill a piping bag with marmalade and spread it onto half of the biscuits.
  • Top with the remaining biscuits to form sandwiches.
  • Dip each biscuit sandwich halfway into the melted chocolate, then coat with sprinkles.
  • Allow to set and serve.
