Petit Four Biscuits
Petit fours are buttery biscuits filled with jam, inspired by 19th-century French traditions.

- 250 gr Butter at room temperature
- 250 gr all-purpose flour
- 75 gr icing sugar
- 50 gr cornflour
- 1 tsp vanilla extract
- ¼ tsp cardamon optional
For Assemly:
- 150 gr dark chocolate melted
- 150 gr mandarin or orange jam or any you like
- Sprinkle
Preheat the oven to 190ºC (fan setting).
In a bowl, combine the butter, flour, icing sugar, cornflour, vanilla, and cardamom.
Mix by hand until you have a soft dough (wear gloves if needed).
Transfer the dough to a piping bag with a large star tip.
Pipe 24 biscuits, each 5-6 cm in size, onto a baking tray lined with parchment paper.
Bake for 12-15 minutes, then let the biscuits cool completely.
Fill a piping bag with marmalade and spread it onto half of the biscuits.
Top with the remaining biscuits to form sandwiches.
Dip each biscuit sandwich halfway into the melted chocolate, then coat with sprinkles.
Allow to set and serve.
