Flaounopitta – Cypriot Halloumi Cake
All the flavour of flaounes, without the fuss!

If you’re a fan of of traditional Cypriot flaounes, then you’re going to fall in love with this easy savoury cake version. Not only does it capture all the classic aromas, from mahlepi and mastic, to fresh mint, halloumi, and sweet raisins, but it also simplifies the process. Instead of folding and kneading dough, everything comes together in one bowl and bakes in a single round tin. In other words, it’s all the flavour with none of the fuss — just mix and bake.

Flaounopitta – Halloumi Pound Cake
Equipment
- 1 round tin with whole
- whisk
Ingredients
- 6 eggs
- 1 cup plain yogurt
- ¾ cup sunflower oil
- 1 cup milk
- 3 cups flour (start with 3 and add more if needed for a thick batter)
- 3 tbsp baking powder
- ½ tsp ground mahlepi
- ½ tsp ground mastic
- ½ tsp ground nutmeg
- 2 tbps Fresh or dried mint to taste
- 1 cup raisins
- 2 cups grated halloumi
- 1 cup crumbled feta
- 1 cup mixed cheeses (edam, anari, etc.)
Instructions
- Preheat your oven to 170°C (fan) or 180°C (conventional).
- In a large bowl, beat the eggs.
- Add yogurt, oil, and milk. Mix well.
- In a separate bowl, combine flour, baking powder, mahlepi, mastic, nutmeg.
- Slowly fold the dry ingredients into the wet mix.
- Add mint, raisins, and all the cheeses. Stir until combined.
- Pour into a greased and floured round baking tin (about 26cm).
- Bake for 40–50 minutes or until golden and a knife comes out clean.
- Let it cool slightly before slicing. Enjoy warm or at room temp!

Notes
- Raisins Tip: Toss the raisins in a bit of flour before adding them to the mixture — this helps them distribute evenly and not sink to the bottom.
- Cheese Mix: We use a combo of edam, cheddar, and anari, but feel free to mix in any cheeses you like — just avoid very greasy ones.
- Sesame: Optional, but adds a nice golden finish if sprinkled on top before baking.
